Culinary Department, Pastry Section
Duties and responsibilities:
- To maintain a high standard of all food preparation, pastry production, bakery production and hygiene in kitchens, according to the standards required by the Company
- To lead and supervise the Pastry & Bakery Team
- Demonstrate knowledge and proficiency of all applicable F&B laws and regulation
- Demonstrate detailed knowledge about advanced pastry and bakery production
- Preparation and presentation of pastry and bakery menu, together with Executive Chef
- Daily preparation of fresh, high quality pastry and bakery products, as required by the Company
- To constantly be physically involved in all phases of the daily operation requirements and all specific duties to all employees under his/her supervision
- To adhere to LQA Standards and to make sure that all subordinate team members are well taught on adhering to LQA Standards
- To achieve the highest standard through strict adherence to the hygiene and sanitation rules & to fully understand the FSMS/HACCP guidelines
- To maximize productivity and maintaining harmony among all food production employees in a fair and impartial way
- To work closely with the Kitchen Management and monitor that kitchens and production areas are spotless and cleaned on a daily basis
- Training other junior members of the pastry and bakery teams
- Control and ensure that expenses / purchases / requisitions are within budget limits
- Help maintain food gross profit set by Hotel Management
- Ensure food portioning, serving, requisitions / receiving from stores are properly controlled
- Draft policies and SOPs for Pastry job function, ensuring effective roll-out internally and externally
- Other duties specific to the position and as assigned by F&B Management
- BSc Degree in the Culinary Arts or similar
- Certificate in Pastry / Bakery is strongly desired
- Fully fluent in English, verbal, spoken and written
- Advanced analytical and organizational skills
- Minimum of 5 years of pastry experience in high-end properties
- Minimum of 2 years of pastry team management
- Expertise in preparation and implementation of pastry menus and SOPs
- Excellent interpersonal and communication skills
